Community : Hoping for nice weather for the fourth

(Hiles News) - As I write this, it seems like our summer – those couple of days last week – is over, and we’re moving back into the cold seasons again! I hope by the time this paper comes out that things have changed and we get some nice weather for the long Fourth of July weekend!

Everyone says that they think there aren’t as many people coming up this way for vacationing this year. Maybe, if you are reading this down south of us, you might just as well jump in the car, fill it with $4 plus gas and come on up north — it might be a lot higher next year! Enjoy it now while you can still afford both gas and food.

Condolences

We were all saddened by the passing of longtime friend and former Hiles resident, Marvin Giessel, of Argonne this past week. He was the brother of Hiles residents Geraldine Votis and Marilyn Pfeiffer and of Argonne resident Dawn Kalata. He will be very much missed by all his many friends and family members here in Hiles.

Hiles Service Club

The Hiles Service Club will meet on Thursday, July 3 at 1 p.m. to discuss plans for the food service at the Hiles Fire Department’s Trap Shoot which will be held on July 19 at the trap range down by the Mill Pond. They will also be evaluating last month’s Craft Show.

Red Hatters

The Red Hatters will meet on Thursday, July 3 also at 6:30 p.m. at the Pine Lake Pub & Café to discuss plans for July’s outing. June was a pretty busy month in Hiles, and July looks like it will be even busier, with a Trap Shoot, the Red Hatters Outing, and the long awaited Leroy Butler Fund Raising Event for Breast Cancer on the 25 and 26. All parties involved in these activities have ordered good warm weather for those dates, too.

Berry Good Summer Treat

Here’s a cool summer variation of the strawberry/chocolate combination, which is always yummy. These would make a nice take-along dish to a picnic, or serve them at your next cookout or summer gathering. They would be pretty for a party, too.

Strawberries with Cream Cheese Filling

32 fresh whole strawberries, large

11 to 12 ounces cream cheese, softened

1/2 cup confectioners' sugar

1/4 teaspoon almond extract

2 tablespoons semisweet or milk chocolate, grated

Cut a thin slice from the stem end of each strawberry, allowing the berries to stand upright on flattened end. Place berries, cut side down, on cutting board. Slice into each berry carefully, cutting almost to, but not through, bottoms, forming four connected wedges. Fan wedges just slightly, taking care not to break apart; set berries aside.

Beat together the cream cheese, confectioners' sugar, and almond extract until light and fluffy. Gently fold in grated chocolate. Using a teaspoon or decorating bag with decorative tip, fill the strawberries. Sprinkle with a little more grated chocolate, if desired for garnish. Arrange on serving platter, cover and chill until ready to serve.
