Community : Adding a word of thanks on Memorial Day

(Hiles News) - Even with the gas prices heading for a moon landing, and grocery prices rising right behind, this glorious spring weather still inspires us to say, “Life is good!” The Memorial Weekend prompts us to add a word of thanks for our liberty and to thank our devoted service men and women for safeguarding it.

It was great to see so many of our summer visitors up for the weekend. I heard it was so busy at Hiles Outpost/BP station that at one point they ran out of fishing bait.

Hiles Remembers

On Saturday a nice crowd of people took part in a moving ceremony presented by the Forest County Veterans Honor Guard. In remembrance of our war heroes and all servicemen and women, who are all heroes for their sacrifices made in service to our country. Even in times of peace they sacrificed their time to maintain our country’s defense, and we are proud to show our gratitude for that service.

The people gathered at the Hiles town hall on front of the Honor Roll took part in a patriot sing along led by Larry Berg. Mistress of ceremonies was Jolynn Pfeiffer who served in the Marine Corps.

This was followed by a pot luck dinner in the hall. The Hiles Service Club bought fried chicken from Paul and Terri Jenkins, and the rest of the meal was donated by some of the best cooks in the north woods.

This was the fourth annual Memorial Weekend observance for the Hiles Service Club. The purpose of the Service Club is to sponsor events like this as part of an effort to build community. This is a small town but a very friendly one, and it’s that spirit of working together and pride in our town that the Service Club works to preserve here in Hiles. Everyone is invited to join this organization. Their meetings are held on the first Thursday of every month at 1 p.m. at the Hiles Museum. The next meeting is June 5, 2008, at 1 p.m.

Red Hatters on Quest for Blossoms

On Friday, May 30 the Hiles Hattitude will meet at Pine Lake Pub in time to carpool. The destination — Marilyn’s Greenhouse in Lakewood. There will be lunch on the way. If anyone would like more details contact May’s hostess, Judy Metternich at 478-4255.

Rummage Sale Success

The rummage sale held at Hiles Pine Lake Campground to benefit the Leroy Butler Cancer Fund was a success. Many people donated a lot of good stuff, and on Saturday a lot more found those treasures to buy.

The money raised all goes to the fund.

The horse shoe toss to raise money for this fund continues every Saturday afternoon at Pine Lake Pub through July 19. Come on over and enter the weekly contests. The money goes to a good cause; you will have fun, and maybe even win some money.

Fire up the Slow Cooker

On those days when you know you will be busy, it is nice to know supper will be waiting in the crock pot. Here’s another easy dish:

Slow Cooker Salsa Chicken

4 boneless skinless chicken breasts

1 cup salsa

1 package reduced sodium taco seasoning

1 can reduced fat cream of mushroom soup

1⁄2 cup reduced fat sour cream

Add chicken to slow cooker. Put taco seasoning over chicken. Pour the salsa and soup over that. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve over rice.

If you have a newer slow cooker it may cook faster. Adjust cooking time accordingly. You can also use cream of chicken or celery soup if desired. The recipe says it serves six, but I think to do that you’ll need to cut the chicken breasts into smaller chunks or just add a couple more at the beginning. A sprinkle of shredded cheddar or Mexican cheese just before serving would be nice, too.
