Brown Street Bakery and Delicatessen to open Sept. 1

It's back to the future for a downtown business. September 1 will mark the debut of a new business in an old location.

Brown Street Bakery and Delicatessen will take over the building at 151 North Brown Street, formerly Bernie's, on September 1. There will be a grand opening in October.

Using Brown Street as a part of the name is just one of the ways in which new owner Tony Yunger hopes to connect with the downtown. “We're going to redo the front store façade,” said Yunger. “We want to get the building repainted and brightened up. That should be finished in the fall of 2007. We'll have new seating inside and out, a water fountain and canopy in the near future.”

Yunger went on, “I want to build in the downtown. I'd like people to be excited about the small businesses, the locals that can also profit from the shoppers that the new department stores will bring in. We want to have a cheery place to relax in, from the hustle and bustle of shopping or work. I want to help create the walking traffic we're missing. I want to bring back Brown Street.” That's part of the reason Yunger went with Brown Street Bakery & Delicatessen as a name.

Yunger and his wife Diana have two children, Kristen and Toni-Lynne. Diana Yunger works for J.C. Penney in Rhinelander. Yunger learned his craft as a youngster working with his father. He was 14 years old when he went to work wrapping donuts for his dad. His dad baked for Winchell's Donuts, Dunkin' Donuts and his own bakery, Donut Masters. Yunger started working in Rhinelander at this location when the store was known as Joe's Pastry Palace in 1992.

Yunger has plenty of ideas for the new business, “We're going to be selling the Rosla line of cooking equipment and J.A. Henckel knives. Nueske's line of meats are high quality and we'll be carrying apple wood smoked ham, salami, pastrami and pepper smoked bacon. I plan on making all the old crusty breads such as Greek green olive bread, and breads made with semolina flour, a corn flour used to make a lighter, airier bread.”

Brown Street Bakery will carry multi-grain breads, rolls, sandwiches and homemade soups. They will specialize in sourdough, honey grain wheat breads and muffin breads. Yunger said, “Look for homemade potato salads, rigatonis, coleslaw and pasta salads. We want to offer high quality customer service. We want you to know our name and we want to know yours.”

Brown Street Bakery & Delicatessen will be open from 5 a.m. to 4 p.m. Monday through Friday and from 5 a.m. to 2 p.m. on Saturdays. The store will be closed on Sundays.
