(Hiles News) - They say, “If you don't like the weather in Wisconsin, just wait a bit and it will change!” If variety is truly the spice of life, we live pretty spicy lives up here. At least the weather doesn't give us a chance to get bored! It's a pretty good year for gardens if you water during the dry spells. The wild berries, though, are not getting a lot of water and don't seem to be amounting to much.

Catchin' Anything?

If you've been having luck fishing, maybe you've grown tired of the same old breaded and fried fish. Try this fresh taste in cooking the catch.

Low fat Grilled Fish - Serves 4

1 tablespoon minced garlic

4 tablespoons chopped fresh basil

1 tablespoon chopped fresh parsley

2 tablespoons lemon juice

4 cod fillets, each 6 ounces You may substitute swordfish, halibut, sea bass or any other whitefish, or any of our fine fish from local lakes. If using small panfish, use several fillets per person.

Cracked black pepper, to taste

4 green olives, chopped

4 thin slices lemon

Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.

In a small bowl, combine the minced garlic, basil, parsley and lemon juice.

Place aluminum foil on a baking sheet or a grill-pan designed for grilling seafood. Spray with cooking spray. Place fish on aluminum foil and spray with cooking spray. Top each fillet with equal amounts of the garlic mixture. Sprinkle with black pepper.

Grill over medium heat, turning once, until the fish is opaque throughout when tested with the tip of a knife, about 10 minutes.

Garnish with green olives and lemon slices. Serve on warmed plates.

Got Attitude?

A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort. Herm Albright (1876 - 1944)

Complaining is good for you as long as you're not complaining to the person you're complaining about. Lynn Johnston (1947 - ), For Better or For Worse, 11-06-03

I am still determined to be cheerful and happy, in whatever situation I may be; for I have also learned from experience that the greater part of our happiness or misery depends upon our dispositions, and not upon our circumstances. Martha Washington (1732 - 1802)

A strong positive mental attitude will create more miracles than any wonder drug.

Patricia Neal

The greatest discovery of my generation is that a human being can alter his life by altering his attitudes of mind. William James (1842 - 1910)
