Hiles News - The old comic line is that “everybody talks about the weather but nobody does anything about it.” Well, with the weather the way it has been, nobody would want to do anything about it, except enjoy it. This is the weather we dreamed of and wished for through the cold winter.

New Girl in Town

Dan and Margaret McCarthy are the proud parents of a new baby, Grace Ann arrived on Tuesday of last week. She's all pink and pretty, with lots of dark hair. Welcoming her home are older siblings, Brianna, James and Cierra. Congratulations to the whole family.

Strawberry Time Up North

Strawberry farms are the site of lots of good picking this time of year. We all love short cake and jam, but here's another way to enjoy the healthful berry.

Strawberry and Spinach Salad

This salad is full of Vitamin A and C. The bright green spinach looks pretty and fresh with the contrasting red of the strawberries. The flavors are excellent together.

1 pint fresh strawberries

2 bunches fresh spinach

1/2 cup sugar

1 1/2 tablespoons minced green onion

1/2 teaspoon Worcestershire sauce

1/2 teaspoon paprika

1/2 cup olive oil

1/2 cup balsamic or cider vinegar

2 tablespoons sesame seeds

Wash strawberries. Slice into halves or quarters and place in a large bowl.

Tear large spinach leaves into small pieces. In a medium bowl combine remaining ingredients and whisk together. Add dry spinach to berries. Pour dressing over all and toss.

This can be made even simpler by just using a good balsamic vinaigrette dressing over the berries, spinach and a few thinly sliced sweet onions..

Art fair Saturday in Arbor Vitae
The Lakeland Art League Inc. and Lakeland Area Kiwanis Club are co-sponsors of "Art Fair 2007" to be held Saturday in Arbor Vitae's Fireman's Park on Highway 70 East at Big Arbor Vitae Drive in Arbor Vitae.
